Whole bean coffee generally stays fresh for 2-3 weeks for varietals and 3-4 weeks for flavored coffees. Ground coffee begins to stale immediately after grinding, so it's best to use it within a week.
Air, light, and moisture are the enemies of coffee freshness. Store your coffee in an airtight container, like a Planetary Design Canister, in a cool, dark place.
The general recommendation is 1.5 tablespoons of coffee per 6 ounces of water, but you can adjust this to your preference. For stronger coffee, use 2 tablespoons per 6 ounces of water. For weaker coffee, use 1 tablespoon per 6 ounces of water.
